Scones with mosaic oatmeals

 New Hampshire Morning MountainSpice




 Preheat oven to 400 Degrees. Line a baking sheet with parchment paper.


1 1/2 cups of all purpose flour
1 1/3 cups NH Morning Mountain Spice oatmeal
2 tablespoons sugar, preferably natural sugar
1 tablespoon baking powder 
½ teaspoon baking soda
½ teaspoon salt
1 stick + 2 tablespoons cold butter (10 tablespoons in total)- cut into small pieces
1 large egg
½ cup + 2 tablespoon light cream

 To Make:


Stir egg and light cream together. Set aside.


 In food processor, combine dry ingredients. Pulse 3-4 times.


Add butter pieces and pulse again until butter is pea sized and oatmeal is somewhat flaky.Place mixture into large bowl.  Pour egg and cream mixture over dry ingredients and stir until mixture comes together…. Do not overwork. Invert onto work surface and gently mold into circle, about 1- 1 ½” thick .  Cut into 8 pie pieces with a floured drenched knife.


 Brush top  lightlywith cream and sprinkle with 1-2 tablespoons of natural sugar (in addition to sugar in recipe).


 Bake for 18 – 20 minutes, until a light golden. Cool for a few minutes on rack before serving.
